History and tradition

Florentine Kitchen Knives was founded in 2012 by industrial designer Tomer Botner. In 2016, his wife Noam Blumenthal, a fashion designer, joined him. The brand was founded in the Florentine neighborhood in southwest Tel Aviv, after which the company is named. Each year, Florentine Kitchen Knives releases limited editions of its signature knives with stacked handles, and makes custom kitchen and table knives for many of the world's best restaurants and most successful chefs.

Knife maintenance

1. do not put the knives in the dishwasher.
2. use a light detergent, preferably use a sponge, please do not use strong chemical solutions.
3. wiping is always better than rubbing. Do not soak the knives in water.
4. keep your knife dry when not in use. Drying well after cleaning is very important, especially for hard to reach areas.
5. if you do not use your knife for a while, oil the blade and handle with mineral or camellia oil. A few drops on a piece of cloth will do the trick. For handles made of wood or leather, linseed or mineral oil is highly recommended.
6. use a whetstone or a water-cooled stone sharpening system to sharpen the knives.
7. use a steel/ceramic honing stick to align the edges and extend the time between sharpening.
